Grilled Avocado with Pesto

Preparation Time: 3 minutes
Cooking Time: 2 minutes
Ingredients (Serves 2)
1 Avocado, ripe but firm, sliced in half
2 Tbs. Pesto
Extra virgin olive oil (EVOO)
Sea salt to taste.
Preparation
Carefully spoon out avocado halves and remove pit.
In a non-stick frying pan grill avocado halves for a few minutes, turning it over a couple of times.
Put grilled avocado on serving plates and spoon pesto into hole left by pit.
Add EVOO and sea salt to taste and serve.

Comments
You may use your favorite kind of pesto (Multi Nut and Seed Pesto, Mixed Nut, Seed, Soy Bean and Cilantro Pesto, Devil's Pesto)
As an alternative to plain EVOO you may use your favorite type of flavored EVOO
Instead of sea salt you may season with Spike Original Magic
Wine and Beverage Pairing
Martinelli Sparkling Cider, Prosecco di Valdobbiadene, Vermentino Maremma Toscana IGT Bianco d'Elisa, Lambrusco Emilia IGT.
