| Ingredients (Serves 6) |

Medium tomatoes, possibly heirloom |

Fresh mozzarella |
| 2 Handful |
Basil, washed and ripped by hands |
| 1 Tbs. |
Capers |
| 1 Tbs. |
Extra virgin olive oil (EVOO ) |

Balsamic vinegar from Modena (salad grade, to taste) |

Sea salt and pepper to taste |
| Preparation |

Wash tomatoes thoroughly, slice them and lay on serving plate. |

Slice mozzarella and alternate with tomato slices. |

Sprinkle with hand-ripped basil leaves. |

Season with sea salt and pepper to taste. |

Drizzle with EVOO and balsamic vinegar from Modena (salad grade) and serve. |
