Large Lima Beans with Parmigiano Reggiano Cheese

Preparation Time: 4-5 minutes
Ingredients (prepare directly in individual serving bowls)
2-3 Tbs. Large lima beans
Parmigiano Reggiano or Grana Padano cheese, shaved.
•. Extra virgin olive oil (EVOO)
Preparation
Spoon desired amount of boiled large lima beans, or other favorite beans, in a bowl.
Shave medium aged Parmigiano Reggiano or Grana Padano cheese on top.
Microwave for 1 minute, or until cheese starts to melt.
Drizzle EVOO and serve, letting guests salt to taste.

Instead of Parmigiano Reggiano or Grana Padano you may used your favorite medium aged, hard cheese, such as Grana Trentino, Pecorino Sardo, Gouda cheese.
The EVOO may be flavored according to personal taste.
