Flavored EVOO and Condiments
(More flavored extra virgin olive oil recipes)

Aglione

Preparation Time: 12 minutes
Ingredients
3 Cloves garlic, minced
10 Fresh rosemary sprig
2 Tsp. Sesame seeds
1 Tbs. Coarse sea salt
1 Tbs. Dried lemon mint
1 Tbs. Fennel seeds
3 Tbs. Pomegranate arils
1/2 Tsp. Cardamom powder
Preparation
Wash rosemary thoroughly, strip leaved from stem, then mince with garlic.
In a mortar, hand crush fennel seeds and coarse salt.
Add minced garlic and rosemary and grind ingredients together with pestle.
Add all ingredients and mix well.

The aglione (literally 'big garlic' in Italian) is a traditional peasant seasoning used with steaks, grilled or baked meat and seafood.
As for many trditional peasant recipes, there are many variations which change from household to househlod. For the above interpretation I added unusual ingredients such as pomegranate arils, sesame seeds and powdered cardamom.
Tipically it is prepared in abundant quantity and preserved in glass jars in the refrigerator to use for rubbing on meats and seafood for baking or grilled.
It is important to sterilize the long-term storage jars with boiling water and put them in a warm oven to dry.
