Plum 'n Wine Compote

Preparation: 15 minutes, plus 5-10 minutes marinating and 45-60 minutes cooling.
Cooking Time: 15 minutes
Ingredients (6 serving)
2 cups Ripe plums, pitted and sliced in half.
1/2 glass White wine
1 Cinnamon stick
2 Biscotti
Preparation
In a bowl marinate plums with wine and a few shards of cinnamon for 5 to 10 minutes.
Transfer mixture into a pan, bring to low boil, then cook on medium low heat for about 15 minutes, or until plums are almost completely dissolved.
Place biscotti in a bowl, cover with compote, add the remaining cinnamon stick, and let cool before serving, either warm or refrigerator cold.

Comments
The wine I used here is the frizzante (lightly sparkling) Trebbiano dell'Emilia IGT by Azienda Agricola Garuti, but you may use your favorite dry white wine or, if you like a stronger flavor, a tannin rich, full bodied red.
Instead of cooling the compote in a large bowl, you may choose to prepare single servings, using smaller cups and placing half a biscotto at the bottom of each one, as seen in the image to the right above. Please note that the bowl in the bottom center is topped with delicious honey flavored compact and creamy Vanilla Greek Gods yogurt.
For the compote pictured above I used the excellent anise flavored La Doce Vita (The Sweet Life) Classic Italian Biscotti with almonds.
Wine and Beverage Pairing
Lambrusco, Moscato di Sorso Sennori, Primitivo di Manduria DOC Dolce.
