Scrambled Eggs with Sliced Avocado |

Avocado |

Sea salt and pepper to taste |

EVOO, balsamic vinegar from Modena to season |
| Preparation |

Slice avocado, lay on plate and season with sea salt, pepper, EVOO to taste. |

Scramble eggs in teflon pan without oil or butter. |

Place scrambled eggs on serving plates and drizzle with balsamic vinegar from Modena to taste. |

As a mid-morning late breakfast or brunch, I drink one of my favorite Chinese teas, either white, green, red, or Dragon Pearl tea. |

As lunch, I would pair it with a glass of Prosecco di Valdobbiadene from Veneto, Vermentino from Tuscany or Sardinia, Pinot Grigio from Friuli, or frothy Lambrusco di Sorbara from Emilia Romagna. |
