Scrambled Eggs with Sliced Avocado

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Ingredients (Serves 2)
2 Egg
1 Avocado
Sea salt and pepper to taste
EVOO, balsamic vinegar from Modena to season
Preparation
Slice avocado, lay on plate and season with sea salt, pepper, EVOO to taste.
Scramble eggs in teflon pan without oil or butter.
Place scrambled eggs on serving plates and drizzle with balsamic vinegar from Modena to taste.

Wine and Beverage Pairing
As a mid-morning late breakfast or brunch, I drink one of my favorite Chinese teas, either white, green, red, or Dragon Pearl tea.
As lunch, I would pair it with a glass of Prosecco di Valdobbiadene from Veneto, Vermentino from Tuscany or Sardinia, Pinot Grigio from Friuli, or frothy Lambrusco di Sorbara from Emilia Romagna.
