Hot Garlic Scrambled Eggs with Capers

Preparation Time: 2 minutes
Cooking Time: 6 minutes
Ingredients (Per Person)
1-2 Eggs
1 Tsp. Capers
1/2 Clove garlic, sliced
1 Dried hot chile pepper, crushed
1-2 Tbs. Beans marinated with fennel seeds
Sea salt and pepper to taste
Preparation
In a non stick frying pan, break egg on top of capers, sliced garlic, and crushed chile peppers, stir and mix mix with wooden spoon and fry to taste, about 5 to 7 minutes.
Serve with 1 or 2 spoonsful of marinated beans then season on individual plates with salt and pepper to taste

Instead of scrambling the egg before pouring it on top of whatever I am cooking it with, I like to break the egg on top of the other pre-warmed ingredients, directly into the frying pan, then mix everything while it cooks. This way, instead of the uniform light yellow color typical of scrambled eggs, the fried egg has lighter and darker parts, depending on the amount of yolk in the various chunks. I like it better this way, but you may scramble your eggs as you like them.
Wine and Beverage Pairing
As a mid-morning snack, late breakfast or brunch, I wash it all down with yerba mate or tea. If you prefer coffee, then use your favorite brew with or without latte.
At lunch instead, I would pair it with a glass of Monteregio di Massa Marittima Aurora, Pinot Grigio or Verduzzo dei Colli Friulani.
