Brigit's Cheese and Herb Omelette |

| Ingredients (Serves 2) |
| 4 |
Eggs |
| 1/2 cup |
Diced Gouda, Jalsberg, or another favorite young, firm cheese |
| 1 |
Handful basil, mint, or any other fresh, leafy herbs |
| 1 Tbs. |
Extra virgin olive oil (EVOO) to fry |

Sea salt to taste |
| Preparation |

Dice cheese finely and set aside |

Beat eggs with 1 scant teaspoon water |

Add salt to taste. |

Pour beaten eggs slowly into hot frying pan with olive oil coating entire pan. |

Turn down heat and slowly fry eggs. |

Spread cheese cubes evenly and fry until nearly dry on top. |

Rip up herbs onto top of omelette and press onto top os slightly moist egg mixture. |

Turn onto a plate then put back into frying pan to finish cooking the other side. |

Turn onto a plate, fold over, slice , garnish plate with fresh herbs and serve. |
