Two Bean Scrambled Eggs

Preparation Time: 4 minutes, provided that beans have boiled/steamed in advance, or are canned.
Cooking Time: 5 minutes
Ingredients (Per Person)
1
Egg
2 Tbs.
Boiled beans
1 Tbs.
Steamed green beans
Sea salt and pepper to taste
Preparation
Sauté beans in teflon frying pan for about 3 minutes on medium-high heat.
Add scrambled egg mixture and fry to taste.
Place scrambled eggs on serving plate, add salt and pepper to taste.

Comments
In the photo above the two-bean scrambled eggs are served with pane carassau (flat bread from Sardinia) drizzled with Spike Original Magic and sprinkled with rosemary flavored EVOO.
Wine and Beverage Pairing
As a mid-morning late breakfast or brunch, I drink tea.
For lunch, I would pair it with a glass of Randi Spumante Demi Sec, or Lambrusco di Sorbara DOC Podere Ca' Bianca Secco, from Emilia Romagna.
