Roasted Chestnuts |
| Preparation Time: 2-3 minutes |
| Cooking Time: 12-15 minute |
| Preparation |

Put a heavy baking pan or tray on high heat. Make an incision across each chestnut and set in the pan. |

In the meantime, preheat oven to 400°F. (200°C.). |

After a few minutes turn over chestnuts to avoid burning them on one side, and lower heat. |

After a few more minutes turn heat off and move pan inside the oven. |
| • |
Bake until the chestnut meat visible thrue the widening incision turns to a darker, orangy shade of yellow. |

This is a simple way to roast chestnuts at home using a simple stove top and oven. |

Traditionally chestnuts were roasted on open fire, inside an old pan with holes at the bottom, moving chestnuts continuosly to avoid burning one side. |

Raosted chestnuts are excellent paired with a wide range of red wines, from frothy, low-alcohol Lambrusco from Emilia, to full bodied Primitivo di Manduria DOC and almost anything in between. |
