Balsamic Red and Wild Rice

Preparation Time: 5 minutes, plus 10 minutes rest before serving.
Cooking Time: 35 minutes
Ingredients (Serves 2)
1/4 cup Whole red Chinese rice
1 Tbs. Wild rice
1 Tbs. Raw pumpkin seeds
1 Tbs. Balsamic vinegar from Modena
Preparation
In a bowl combine two types of thoroughly washed rice and pumpkin seeds.
Cover with water plus 1/3 of the height of the rice and cook for 30 minutes on medium high heat.
Add balsamic vinegar and cook for 5 more minutes stirring often.
Add sea salt to taste, cover with lid and let sit for 10 minutes before serving.

Comments
The balsamic vinegar from Modena adds a delicate flavor and creaminess to the rice. In the picture above it is served with Organic Herb Vegetable Stew.
