Marinated Bean, Blueberry and Mushroom Salad |
| Ingredients (Per Person) |

Organic cranberry beans marinated in EVOO and anise seeds to taste |

Blueberries to taste |
| • |
Sliced steamed mushrooms (from leftover Steamed Broccoli and Mushrooms. As an alternative you may use raw mushroom, sliced) |

Sea salt and pepper to taste (advisable to freshly grind) |
| Preparation |
| • |
Put beans, blueberries and mushrooms in a bowl. |
| • |
Grind salt and pepper to taste, toss and serve. |

Since the beans are soaked in EVOO, you should not need to add more of it. If you add EVOO, you may use a flavored one. |

Balsamic vinegar, freshly squeezed lemon, lime, or Spike Original Magic (instead of sea salt) may be added to taste. |
| Wine and Beverage Pairing |

As mid-morning late breakfast or brunch, I drink one of my favorite Chinese teas, either white, green, red, or Dragon Pearl tea. |

As part of a meal, I would enjoy it with a glass of Prosecco di Valdobbiadene, Vermentino from Tuscany or Sardinia, Pinot Grigio, Pignoletto Frizzante or Lambrusco di Sorbara from Emilia Romagna. |
