Italian Style Sausage with Sweet Peppers and Kalamata Olives |

| Cooking Time: 8 minutes |
| Ingredients (Serves 2) |
| 1/2 |
Onion julienned |
| 6 |
Sweet mini peppers, or two regular one, sliced |
| 1 |
Tomato, chopped |
| 10 |
Kalamata olives, chopped |
| 1 |
Large Italian style sausage |
| 1 Tsp. |
Extra virgin olive oil (EVOO) |

Sea salt to taste |
| Preparation |

In a frying pan sauté julienned onion for one minute in EVOO. |

Add sliced peppers, tomato, and olives and cook for about 2 minutes. |

In the meantime cut sausage casing lengthwise then crumble meat roughly into frying pan. |

Salt to taste and cook for 5 minutes. |

I had had a craving for Italian style sausage for a while, so when I found myself in front of what looked like the real stuff I went for it under the 80/20 rule (80% of the time eat consciously what's good for you, but 20% of the time give in to what you like even if it's not the best fuel for your body. |
