Italian Style Sausage with Sweet Peppers and Kalamata Olives

Preparation: 5 minutes
Cooking Time: 8 minutes
Ingredients (Serves 2)
1/2 Onion julienned
6 Sweet mini peppers, or two regular one, sliced
1 Tomato, chopped
10 Kalamata olives, chopped
1 Large Italian style sausage
1 Tsp. Extra virgin olive oil (EVOO)
Sea salt to taste
Preparation
In a frying pan sauté julienned onion for one minute in EVOO.
Add sliced peppers, tomato, and olives and cook for about 2 minutes.
In the meantime cut sausage casing lengthwise then crumble meat roughly into frying pan.
Salt to taste and cook for 5 minutes.

I had had a craving for Italian style sausage for a while, so when I found myself in front of what looked like the real stuff I went for it under the 80/20 rule (80% of the time eat consciously what's good for you, but 20% of the time give in to what you like even if it's not the best fuel for your body.
The recipe above is totally made up using what was available in the fridge at the time.
