Brigit's "Frikin' Awsome" Rosemary Pork Tenderloin |

| Ingredients (Serves 4) |
| 680 gr. (1.5 pound) |
Pork tenderloin |
| Large handful |
Fresh rosemary |
| 3/4 pound |
Potatoes, halved or quartered, depending on size |
| 1/2 cup. |
Dry white wine |
| 2 Tbs. |
Extra virgin olive oil (EVOO) |
| 3 |
Large garlic cloves, crushed, stuck into tenderloin |
| 2 Tbs. |
Salad grade balsamic vinegar |

Coarse sea salt to taste |
| Preparation |

Line a baking pot with non-stick aluminum foil. |

Season tenderloin with salt, rosemary sprigs and garlic cloves, pressing them into the meat and lay into baking pan. |

Wash potatoes thoroughly, cut them into pieces and surround meat into baking pan. |

Add salt to taste, EVOO, salad grade balsamic vinegar and wine. |

Marinate covered for several hours, or even overnight. |

Pre-heat oven at 375°F. (190°C.). |

Bake for 45 minutes. |

"This is frickin' awesome," said our friend Billy Brewer who was over for dinner and for whom the tenderloin was prepared in the first place, as he does not eat seafood, so he would not share Brigit's Thai Style Wild Salmon with us. The flavor of the rosemary and garlic got into the meat, which was cooked to perfection and melted in the mouth. |
