Fig and Avocado Salad |

Large ripe fig, cut into chunks |

Avocado, cut into chunks |

Extra Virgin Olive Oil (EVOO) |

Sea salt and pepper to taste (advisable to freshly grind) |
| Preparation |
• |
In a bowl toss fig and avocado sesoned with extra virgin olive oil, sea salt and pepper to taste. |

You may add cherry tomatoes cut in half, and/or chunks of cut up grapefruit. Personally I believe the tomatoes overwhelm the delicate flavor of the fig and avocado. |

The EVOO may be flavored. In this case I used peppermint flavored EVOO. |
• |
Balsamic vinegar, freshly squeezed lemon, lime, or Spike Original Magic may be added to taste. |
| Wine and Beverage Pairing |
• |
Excellent with a cold glass of white wine such as Ansonica or Vermentino from Tuscany |
