Salami, Marinated Bean, Bean Purée and Rucola Sandwich
Ingredients (Serves 2)
2 Whole wheat Oroweat sandwich thin
6 Slices sopressa or other favorite cold cut
• Marinated beans to taste
• Puréed beans to taste
• Rucola to taste
Preparation
• Toast both slices of whole wheat Oroweat sandwich thin.
• Spread purèed beans to taste inside both slices of bread.
• Add one slice of sopressa or other favorite cold cut to one of the slices.
• Add marinated beans to taste on top of cold cuts.
• Add another slice of sopressa or other favorite cold cut to one of the slices.
• Add rucola to taste on top of cold cuts.
• Top with second slice of bread and enjoy.

• I am 98% pescatarian, but I love cold cuts from my earlier life, when I was growing up in a region of Italy, Emilia Romagna, where pork was part of the everyday diet.

In fact, in the region there is not one, but two monuments dedicated to the pig. One is in the small town of Castelnuovo Rangone, in the foothills of the Modenese Apennines, and one in Parma, the city known worldwide for its prosciutto, the Parmigiano Reggiano and the Università degli Studi di Scienze Gastronomice (University of Gastronomic Sciences.)

The pig is celebrated there because no part of it goes to waste. Long ago, the local peasants learned how to cook, cure, age, and eat basically every part of the pig or hog.
