Brigit's Caribbean Style Snapper |

| Cooking Time: 15 minutes |
| Ingredients (Serves 2) |
| 1 Pound |
Filet red snapper |
| 1 |
Medium tomato, diced |
| 1/2 |
Onion, diced |
| 1 |
Shallot, diced |
| 5 |
Mini red and yellow sweet peppers (i large or 2 small regular peppers if mini peppers are not available) |
| 1 |
Small handful of fresh basil and mint |
| 3 |
Garlic cloves, minced |
| 1 Tbs. |
Pine nuts |
| 1 Tbs. |
Raw pumpkin seeds |
| 2 Tbs. |
Extra virgin olive oil (EVOO) to taste |

Juice of 1 lemon, freshly squeezed |

Sea salt to taste. |
| Preparation |

Combine all ingredients in a large bowl with the exception of snapper filet and sauté with 1 Tbs. EVOO for 5 minutes.. |

Line a baking tray with non-stick aluminum foil, lay the filets and drizzle 1 Tbs. EVOO on top. |

Cover filet with sauce and bake in pre-heated oven at 450°F. (230°C.) for 10 minutes. |

Do not turn. |

Broil briefly until mixture bubbles (3 - 4 minutes). |

Take out from oven and let sit a few minutes before serving. |

Instead of red snapper filet, you may use swordfish, tuna, or your favorite seafood. You may need to adjust baking time with different fish varieties. |

If you enjoy spicy food add hot chile pepper to taste to the sauce, it can be prepared without chili pepper as well. |
