Grilled Avocado with Pesto |

| Ingredients (Serves 2) |

Avocado, ripe but firm, sliced in half |
| 2 Tbs. |
Pesto |

Extra virgin olive oil (EVOO) |
| • |
Sea salt to taste. |
| Preparation |
| • |
Carefully spoon out avocado halves and remove pit. |
| • |
In a non-stick frying pan grill avocado halves for a few minutes, turning it over a couple of times. |

Put grilled avocado on serving plates and spoon pesto into hole left by pit. |

Add EVOO and sea salt to taste and serve. |

You may use your favorite kind of pesto (Multi Nut and Seed Pesto, Mixed Nut, Seed, Soy Bean and Cilantro Pesto, Devil's Pesto) |

As an alternative to plain EVOO you may use your favorite type of flavored EVOO |
