Grilled Stuffed Tomato

Preparation Time: 6-7 minutes
Cooking Time: 3 minutes
Ingredients (Serves 2)
1 Large heirloom tomato
2 Tbs. Marinated beans with fennel seeds
Scamorza (smoked mozzarella) cheese to taste, cut into pieces
Sea salt and ground pepper to taste
Preparation
Slice in half, then carveout hollows in large heirloom tomato, being careful to keep the interior as whole as possible, discard seeds and set aside.
Spoon marinated beans with fennel seeds into hollowed tomato and add a pinch of sea salt.
Top beans with scamorza cut into pieces.
Slice tomato interior, put on top of cheese and season with sea salt and pepper ground to taste at the moment.
In a non-stick frying pan grill half tomato bottom first for 1 to 2 minute then turn over and grill lightly.
Transfer grilled tomato halves top size up and serve.

Comments
Instead of Marinated beans with fennel seeds you may use your favorite flavored marinated beans or plain boiled beans.
Instead of sea salt you may season with Spike Original Magic.
If you wish, you may drizzle flavored EVOO, or EVOO on top of grilled tomato.
