Tortilla with Blue Cheese, Marinated Beans and Cauliflower Purée

Preparation Time: 4-5 minutes
Cooking Time: 1 minute
Ingredients (Per person)
1 Tortilla (6 inches, or 15 centimeters in diameter)
1 Tbs. Bleu cheese
1 Tbs. Beans marinated with basil
1 Tbs. Cauliflower purée
Sea salt to taste
Preparation
Spread a spoonful of blue cheese across the middle of a tortilla and microwave for 1 minute.
Add a spoonful of beans marinated with basil taken out the refrigerator at least 1 hour before serving.
Top with one spoonful of cauliflower purée.
Add sea salt to taste, wrap and enjoy.

Comments
The cauliflower purée in the picture above is the version with celery and fennel, thus the greenish color.
You may experiment with different types of cheese and beans marinated with different herbs or seeds.
Wine and Beverage Pairing
One glass of chilled Corona beer, Prosecco, Rosato Italiano IGT, or Lambrusco Italia IGT.
