Delicious Grilled Lettuce and Sweet Mini Peppers

Preparation Time: 5 -6 minutes
Cooking Time: 8 -10 minutes
Ingredients (Serves 2)
1 Head lettuce
3 Vine sweet mini peppers or if unavailable, red, yellow, and orange bell peppers.
Extra virgin olive oil (EVOO )
Sea salt and freshly ground pepper to taste
Preparation
Wash lettuce thoroughly and slice horizontally (about 3/4 inch thick).
Cut in half sweet mini peppers, discard seeds and wash thoroughly.
Place sliced lettuce and sweet peppers on a flat, non-stick grilling skillet and grill for 6 to 10 minutes, or until done, turning sliced vegetables over at least once.
Transfer grilled vegetables to a serving plate, add salt and pepper to taste, drizzle EVOO over them and serve.

Comments
Fast, healthful and unusual, this truly delicious side dish may be prepared in an apartment, as described above, or can be grilled outside to complement grilled meat and seafood. Grill when seafood or meat is nearly done, as less time is needed.
Balsamic vinegar, freshly squeezed lemon, lime, or Spike Original Magic may be added to taste.
The EVOO may be flavored. In this case I used a home-made rucola-flavored EVOO.
