Steamed Broccoli with Pine Nuts

Preparation Time: 8 Minutes
Cooking Time: 8 Minutes
Ingredients (Serves 4 as side dish)
1 Broccoli head cut into florets
2 Tbs. Pine nuts
2 Tbs. Extra virgin olive oil (EVOO)
1 Tbs. Balsamic vinegar
Juice of 1 lemon
Sea salt or Spike Original Magic to taste
Preparation
Steam broccoli in large saucepan with steaming basket for 8 minutes, or until reaching desired tenderness.
Drizzle with EVOO, lemon juice and balsamic vinegar.
Sprinkle sea salt or Spike to taste and toss.
Sprinkle on pine nuts.
Vegetables and Mushroom Stew
Comments
May be served hot or cold as antipasto or as side dish.
Date and keep the water in which you broccoli was steamed, as it makes for an excellent vegetable broth for future soups. It should last a couple of weeks if thightly closed and refrigerated.

Pinot Grigio DOC Colli Orientali del Friuli, Rosato Italiano IGT, Chianti DOCG Guarniente, Cabernet Franc dei Colli Orientali del Friuli.
