Brigit's String Beans, Potatoes and Tomatoes Stew
with Onion and Fresh Basil |

| Ingredients (Serves 4) |
| 1/2 |
Onion cut into quarters |
| 225 gr. (1/2 pound) |
String beans (or green beans) cut into 1.5 inches long segments |
| 4 |
Medium potatoes cut into bite sized pieces |
| 2 |
Medium sized tomatoes cut into bite sized pieces |
| 1 handful |
Basil leaves |
| 1Tbs. |
Extra virgin olive oil (EVOO ) |

Sea salt to taste |
| Preparation |

In a frying pan sauté onion in EVOO for about 5 minutes on low medium heat. |

Add potatoes and string beans and cook for about 15 minutes, stirring from time to time. |

Add tomatoes and cook for about 15 more minutes. |
| • |
Turn off heat, cut basil leaves into the stew, toss, cover and let sit for a few minutes before serving. |
