Brigit's String Beans, Potatoes and Tomatoes Stew
with Onion and Fresh Basil

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients (Serves 4)
1/2 Onion cut into quarters
225 gr. (1/2 pound) String beans (or green beans) cut into 1.5 inches long segments
4 Medium potatoes cut into bite sized pieces
2 Medium sized tomatoes cut into bite sized pieces
1 handful Basil leaves
1Tbs. Extra virgin olive oil (EVOO )
Sea salt to taste
Preparation
In a frying pan sauté onion in EVOO for about 5 minutes on low medium heat.
Add potatoes and string beans and cook for about 15 minutes, stirring from time to time.
Add tomatoes and cook for about 15 more minutes.
Turn off heat, cut basil leaves into the stew, toss, cover and let sit for a few minutes before serving.
